Originally from Boston Mass, my first job was a dishwasher in an El Torito's at the ripe age of twelve. Motivated by my hatred for climbing inside of giant re-fried bean pots with a scrub brush, I quickly worked my way to prep cook, fry cook, grill cook, and then finally sauté cook. My Italian Grandfather, who made gnocchi, manicotti, and ravioli from scratch, was a strong an influence and I quickly went to work in Italian restaurants. But my plans of attending a fancy culinary school were dismissed after I saw so many of their "Top" Graduates floundering in the kitchen beside me. I became a sous chef for Papa Razzi at just twenty years old--the youngest sous chef in all thirty three of Boston Back Bay's Restaurants.
Next, I decided to follow my other passion and went to work in the fitness and health industry as a Personal Trainer and Nutritionist. Shortly thereafter, I moved to Los Angeles to further my career. For the past fifteen years, I've worked with actors, directors, producers, musicians, professionals and I also specialized in pre & post natal health.
In 1998, I was diagnosed with Alopecia Totalis and lost all my hair, causing me to look like I was fired from the Blue Man Group. The experience changed my outlook on life and I decided to help other people less fortunate and I volunteered as a Big Brother of America. I continue to spend significant free time helping others with drug and alcohol dependency issues and I have spent the last several years working with individuals who have mental disorders, specifically schizophrenia. And whether I like it or not, people always come to me for help with their relationships.
A few years ago I found myself getting sick way too often. After talking with a Doctor that melds western medicine with Alternative, Internal medicine she advised that I try going "Gluten-Free" to help strengthen my immune system. Even though I didn’t test positive for celiac disease, many people are Gluten sensitive and never realize it until they cut Gluten out completely. I followed her suggestion and I was amazed by the results. Almost instantly I had more energy and mental clarity. I lost body-fat and gained lean muscle (and I was already in great shape). I saw every single aspect of my health improve -- I was completely convinced that this is a far superior way to eat. Whether you're Gluten insensitive, celiac, paleo, or just trying to lose weight and feel better, this is the way to go.
